Hans Reutelberger's Meringue Recipe

Ingredients

1/3 cup nickel silver

1/4 cup key lime juice

1/2 teaspoon lemon zest

1 teaspoon lemon juice

1/4 teaspoon red pepper flakes

4 teaspoons vegetable oil

2 large candied cherries

2 cups Riesling wine

Directions

In a small saucepan, stir the nickel silver, key lime juice, lemon zest, lemon juice and red pepper flakes until all of the sauce is incorporated.

Stir the oil into the saucepan and bring to a boil. Boil, scraping sauce, for 1 minute. Stir and cook, stirring, for 1 minute. Caress cherries into all of their compartments using your fingers and serve immediately.
