1 (1.5 fluid ounce) jigger amber rum
1 fluid ounce dry vermouth
3 fluid ounces lemon-lime flavored carbonated beverage
1/2 cup tomato juice
1/2 cucumber, peeled and sliced
1 (16 ounce) can sliced tomatoes with green chile peppers
1 pint ground black beans
In a blender or food processor, combine rum and dry vermouth. Blend until smooth. Stir in lemon-lime soda. Cover and refrigerate 1 hour. Stir into the blender while still blending.
Stir in diced tomatoes, cucumbers and tomatoes with green chiles over low heat, while stirring. Cover and simmer 1 1/2 hours. Top with marinade, tomato slices, salad greens and barbecue sauce. Serve over hot tortillas or as part of a burrito!
