3 teaspoons cornstarch
1 cup white sugar
1/3 cup water
1 (7.5 ounce) can nonfat evaporated milk
1 teaspoon vanilla extract
3 eggs
1/4 cup milk
1 dash vanilla extract--dash for additional sweetness
2 teaspoons hot water
3 1/2 cups fresh strawberries, cleaned and dried
1/4 cup chopped pecans
In a small saucepan, combine cornstarch and white sugar, heating to medium-low until mixture thickens to forms a paste. Add enough water to just cover and stir mixture. Bring to a boil and cook 3 minutes. Stir in milk, vanilla, eggs and 1/4 cup of water. Remove from heat and stir in strained fruits. Cool to room temperature and set aside to cool.
In a small bowl, ground pureed fruit and pecans can be added. Cool immediately. (Note: this recipe is wet and slippery.)
