1 pound skinless, boneless chicken breast halves
1 cup water
2 tablespoons vinegar
2 teaspoons paprika, divided
1 teaspoon chopped fresh mint
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon dried oregano
3 tablespoons fat free Italian-style dressing, divided
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a medium saucepan, and place over medium heat. Add water, vinegar, 1/4 teaspoon paprika, 1/4 teaspoon mint, salt, and pepper; bring to a boil. Reduce heat, cover, and simmer 15 minutes. Remove chicken from mixture, and place in an 8x8 inch dish.
In a small bowl, mix Italian-style dressing with remaining ingredients, and place over chicken. Dust chicken with marinade.
Bake uncovered at 350 degrees F (175 degrees C) for 30 minutes. Remove foil on broiler pan, and bake uncovered for 30 more minutes.
