1 tablespoon vegetable oil
2 cups chopped onion
1 cup chopped celery
1 cup chopped celery
1 cup chopped green bell pepper
4 cups shredded Cheddar cheese
2/3 cup shredded Monterey Jack cheese
Heat oil in a large skillet over medium heat. Saute onion and celery in oil for about 2 minutes. Stir in celery and green pepper. Cook for about 5 minutes, stirring continuously. Reduce heat to medium-low; cook, stirring constantly, for 2 minutes or until celery is tender.
Stir in shredded Cheddar cheese. Add cheese, stirring constantly, until cheese is melted. Spoon over meat mixture in skillet.
