5 ounces uncooked mild Cheddar cheese, divided
8 slices bacon, cut into 1/2 inch strips
2 tablespoons chopped onion
2 tablespoons chopped fresh parsley
1/4 cup fresh lemon juice
1 cup fresh bread crumbs
1 teaspoon crushed red pepper flakes
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, toss the bacon, onion and parsley with hot water. Pour into a 9x13 inch baking dish. Sprinkle slices of bacon in center of each slice of bread.
Bake in a preheated oven until crisp and golden brown, about 30 minutes. Remove from oven and place onto a warm platter. Spoon bread crumbs over slices of bread.
Meanwhile, over a medium bowl, cream together the lemon juice and breadcrumbs. Combine lemon juice and chopped bacon, add to bacon mixture. Spread over bread mixture.
Bake in preheated oven for 1 hour or until bubbly and golden brown. Serve immediately.
