3 eggs
1/2 cup lemon flavored Jell-O mix
2 tablespoons vegetable oil
1 cup lemon juice
1 cup lemon zest
1 cup white sugar
1 1/2 cups buttermilk
1 1/2 teaspoons vanilla extract
2 teaspoons lemon extract
3 cups lemon-lime flavored carbonated beverage (e.g., Pepsi, pineapple juice, raspberry cola)
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) panes of the cake pan.
In a small mixing bowl beat eggs and lemon flavored gelatin into lemon zest and sugar. Stir lemon zest and sugar into the eggs mixture. Fold in the lemon-lime soda. Pour batter into prepared pan. Level large pan and bake in center for 40 minutes, or until a toothpick inserted into the cake comes out clean. Cool completely before cutting into 12 pieces. Cool completely before cutting into squares. Use for snacking, dipping, or serving as an appetizer.
