4 green onions, cut into 1/4 inch slices
1 large tomato, chopped
1 cup chopped onion
2 green bell peppers, sliced
1 large carrot, finely chopped
1 red bell pepper, finely chopped
1/4 cup chopped fresh parsley
1/4 cup chopped black olives
1/4 cup grated Parmesan cheese
In a large saucepan, saute the green onions and tomato in olive oil until tender.
While the green onions and tomato are cooking, heat the skillet over medium heat. Stir in the onion and tomato, then saute for 2 minutes. Add the pepper and parsley, stir well. Add the bell pepper and carrot and saute for 2 minutes. Add the bell pepper and olives and toss well. Add the parsley, black olives and cheese. Stir well and heat gently for about 1 minute.
