2 sweet potatoes, peeled and cut into 1/2 inch pieces
1/2 teaspoon salt
3 tablespoons olive oil
1 teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons butter
3 tablespoons all-purpose flour
3 cups water
In a medium bowl, mix together the olive oil, oregano, garlic, butter and flour. Mix thoroughly. Place 1 cup of the flour mixture into a shallow dish and roll out further, using a rolling pin, to form a rectangle about 2 inches in diameter.
Melt butter in medium saucepan over medium heat. Stir in the water and continue to simmer, stirring often, until butter is melted, about 3 minutes.
Fold one teaspoon of the butter into the center of the fettuccine to form a small wooden tag, place it on the cooked pasta and cover with remaining flour mixture. Roll fettuccine out to shape. Cut fettuccine into 1 inch pieces and place on a plate.
Bake in preheated oven for 1 hour and 10 minutes, or until fettuccine is tender and pasta is cracked. Serve warm or cold.
