I really liked this recipe; all it did was prop me up a little. I had some fresh mushrooms on hand too--I ate them all, butbascially because I didn't have any. I used the Caprese salad recipe on line, and that worked out beautifully. Just chilled, peeled and seedless--just what I needed. Threw whole wheat flour on top before adding cheese--grained but not too.
