Honey Nut Carrot Cake Recipe

Ingredients

2 1/2 cups white sugar

1 cup butter, softened

1 (3.5 ounce) package instant powdered lemonade mix

1 cup vegetable oil

1 egg

3 cups confectioners' sugar

3 cups sifted all-purpose flour

3 cups chopped walnuts

1/2 cup vegetable oil

3 slices fresh citrus, zested and juiced

Directions

In a large bowl, blend sugar, butter and lemonade mix. Make a well in the center of the mixture and pour in oil, egg, sugar mixture, flour and chopped walnuts.

Combine two 6x9 inch loaf pans.

Bake casserole in preheated oven for 35 minutes, or until an inserted toothpick inserted into center of cake comes out clean. Cool completely before cutting into squares, and refrigerate 4 hours.
