1 1/2 cups water
1 1/2 cups vegetable oil
1/2 teaspoon salt
1/2 cup white sugar
2 eggs, lightly beaten
3 tablespoons water
1/2 teaspoon vanilla extract
3 cups fresh broccoli florets
4 potatoes, peeled and cubed
1/2 teaspoon salt
In a large saucepan, bring water to a boil. Remove from heat. Stir in oil, salt and sugar. Cook over medium heat until mixture is thickened; stirring constantly. Remove from heat. Stir in eggs, water, 1/2 teaspoon sugar and vanilla extract. Bring mixture to a boil, stirring constantly. Remove from heat.
Stir broccoli into puddings. Cover and refrigerate overnight.
Meanwhile, bring two cups of water to a boil. Stir in potatoes and cook until tender. Remove from heat and stir in salt, until all ingredients are well mixed. Mix in broccoli, reserving 1/2 cup. Stir mixture into pudding, whisking constantly.
Return pudding mixture to stovetop; simmer, stirring occasionally, for about 8 hours, or until pudding is thickened.
