Fresh Apple Pie VII Recipe

Ingredients

2 1/2 cups fresh apples, peeled

1 (3.5 ounce) package lemon flavored Jell-O mix

1 tablespoon lemon juice

1 tablespoon lemon zest

1 3/4 cups water

1 (8 ounce) can lemon pie filling

1 (3 ounce) package instant lemon pudding mix

1 cup water

1 (8 ounce) package lemon flavored Jell-O mix

1 cup lemon juice

1 (3.5 ounce) package instant lemon pudding mix

2 tablespoons white sugar

Directions

Place peas in large bowl and cut in 1/8 inch slices. Make 3 layers (at least 1 of each) by placing peas in bottom of 2 glass jars. Place 1/4 cup lemon gelatin 1/3 cup lemon juice on top of lemon layer. Reserve lemon layer.

In a large bowl, mix the lemon juice and lemon zest. Stir in water and 1/2 cup lemon pudding mix. Pour over apples and pour lemon mixture over apples in bowl. Mix the lemon mixture with optional lemon gelatin. Cover and refrigerate for at least 1 hour or overnight. Serve warm or cold.

Stir lemon gelatin into lemon gelatin to form lemon pudding mix. Stir lemon juice into pearl glaze.

Top with lemon pie filling, lemon jelly and lemon mixture. Refrigerate at least 4 hours or overnight. (You may want to refrigerate your lemon in case it is too lemony!) Cover and refrigerate for 4 hours or overnight. Serve warm or
