3 -1 cup chopped white onions
1/2 cup chopped celery
1 teaspoon white sugar
1/2 cup packed brown sugar
2 cloves garlic, crushed
2 green onions, chopped
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
1 cup chopped pecans
Melt white onions, celery and sugar in a large skillet. Saute over medium heat until onions are translucent and sugar is melted. Stir in brown sugar, brown sugar, garlic, green onion, salt, pepper, nutmeg and pecans.
Heat oil in a medium skillet over medium-high heat. Place celery/white mixture in pan; cook, stirring, for about 1 minute. Remove from heat.
Place celery mixture in 1-quart casserole dish. Position dish (well beneath bottom of pan) in oven to cool. Pour celery mixture over celery/white mixture.
Cover dish with aluminum foil and sprinkle top with pecans.
Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Cool completely. Please allow to cool completely before cutting into squares or wedges.
