1 (8 ounce) can sliced mushrooms
1 (16 ounce) can corn, drained
1/4 cup olive oil
3 cloves garlic, minced
5 stalks celery, finely chopped
1/2 cup chopped fresh mint
1 tablespoon olive oil
1/4 cup olive oil
1/4 cup chopped fresh parsley
3 cloves garlic, minced
3 tablespoons Italian seasoning
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix sliced mushrooms, corn, olive oil, garlic, celery, chopped mint, olive oil, olive oil, parsley, garlic, Italian seasoning and dried oregano. Mix well.
Place the squid in a shallow dish or pan and sprinkle with the mushroom mixture.
Bake at 350 degrees F (175 degrees C) for 30 minutes or until lightly browned. Remove from oven and place on a large baking sheet, and broil for 10 minutes. Remove from oven and allow to cool slightly. Insert toothpicks into squid and arrange in a single layer on the prepared baking sheet. Broil for 5 minutes on each side. Remove toothpicks and place side down on the baking sheet. Broil for 2 to 3 minutes other side occasionally, or to keep squid from sticking. Broil for an additional minute or so on each side to catch them when broiling.
