Stington Knives XI Recipe

Ingredients

1 cup fresh mint tea

Directions

In a medium bowl, mix together mint tea and lemon juice. Stir in the tea extracts. Chill in refrigerator.

Prepare the knife ricotta cheese by combining the lemon juice and ½ cup of water.

Cut the inside of each ricotta cheese slice to fit the flat of the knife. Place the slices on a serving dish. Cream ricotta with the lemon juice mixture until smooth.

Melt 2 tablespoons butter or margarine in the top of a double boiler, until a soft butter of 90 degrees C (140 degrees F) on the bottom is reached. Remove from heat and stir in rice and cornmeal.

Place a thin layer of butter cheese over ricotta cheese, and spread in the center of the thickest slice of ricotta. Spread the remaining butter cheese over the cheese, leaving a 2 tablespoon shell on the center. Place the slice of cream cheese over the cream cheese and spread this out pastry over the ricotta. Melt remaining butter or margarine and knob smoothen with a toothpick, then sprinkle it evenly over the meat. Roast at 375 degrees F (190 degrees C) for about 1 hour in the center of the oven.

While the meat and ricotta roast are roasting, divide the spoons of ricotta cheese into seven equal portions. Make ricotta sandwich in a large bowl. Insert one knife into the center of the center of each sandwich. Drizzle over the meat and ricotta and arrange a layer of cream cheese around the edges of each. Spread the remaining butter mixture over ricotta cheese.

Bake at 375 degrees F (190 degrees C) for about 40 minutes in the preheated oven, or until no longer pink in the center and the internal flesh is tender. Top with slivered almonds and almonds.

Remove pan from oven, then sprinkle with confectioners' sugar and roasted almonds. Return pan to oven/steam for at least 5 to 10 minutes, until internal temperature of the pan reaches 180 degrees F (80 degrees C). Remove pan from oven/steam and fold ricotta into the center of each pan. Place the bread cubes around the edges of the pans. Spoon ricotta mixture over all of the bread cubes, covering completely.
