1/2 cup all-purpose flour
1/2 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon onion powder
2 tablespoons grated Parmesan cheese
1 (14 ounce) can crushed pineapple, drained
2 tablespoons mineral oil
4 skinless, boneless chicken breast halves - cut into strips
In a small bowl, combine flour, pepper and paprika. Mix well, then stir in onion powder, sour cream, cheese and pineapple. Sprinkle over chicken and wrap in aluminum foil, sealing tightly. Cover foil and refrigerate overnight.
Preheat oven to 800 degrees F (600 degrees C).
Heat oil in 8x8 inch baking dish. Mix together flour mixture, onion powder, Parmesan cheese, pineapple and oil and heat over medium heat, stirring constantly, until mixture comes to a simmer. Pour chicken into baking dish and drizzle with mixture before removing foil.
Bake uncovered, in preheated oven for 1 hour.
