1 cup butter
1 cup granulated sugar
1 cup lemon juice
1 (8 ounce) package sweetened lemonade
1 lemon, juiced
1/4 cup lemon zest
1/4 cup orange juice
1 cup lemon juice concentrate
1 cup corn syrup
1 cup packed light brown sugar
1 cup warm water (110 degrees F/45 degrees C)
1 1/2 cups packed brown sugar
1 cup lemon juice concentrate
12 buttery round crackers
1 cup whipped cream
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 2 (9 inch) round pans.
Beat together the butter, granulated sugar and lemon juice. Stir in lemonade and lemon zest. Mix in orange juice concentrate. Stir in corn syrup and brown sugar.
Spread the batter evenly in the prepared pans. Place crackers evenly over the batter. Spoon cream over crackers. Spread remaining batter on top of crackers. Spread remaining cracker mixture over cream and cream.
Bake for 35 to 45 minutes in the preheated oven, until a toothpick inserted into the center of the bars comes out clean. Cool completely. Cut into squares.
