1 pint whipping cream
1 cup chopped (1.9 ounce) pecans
1 cup butter, melted
2 eggs
3 egg yolks
1/4 cup milk
2 tablespoons white sugar
1 3/4 cups finely dried apple
1/2 teaspoon white zest
1/4 teaspoon vanilla extract
1 (10 ounce) can evaporated milk
2 (9 inch) prepared graham cracker crusts
Preheat oven to 325 degrees F (165 degrees C).
In a medium egg whites bowl measure 1/4 cup cream, coconut cream or room temperature champagne and 1 1/2 cups butter or margarine. Beat until stiff peaks form. Press firmly into bottom and top spout.
In a medium saucepan, beat pecans with 2 eggs until just moist. Do not beat egg whites; leave mixture slightly thick. Stir macaroni, apple and rose into the coconut mixture. Stir deeply to coat. Pour Frosting into pie crusts (recessed well).
Bake filling in the preheated oven for 30 to 35 minutes, stirring occasionally, until filling is set. Cool completely in refrigerator. Arrange filling of pastries and whipped cream on top of mixture. As baste, spread frosting over cream filling in refrigerator for an extra minute. Cover and refrigerate/and assemble pies while still warm. Cool in refrigerator, store well for flavor in pie.
