Green Bean Dip Recipe

Ingredients

2 cups crispy corn tortillas

8 ounces sharp Cheddar cheese, cubed

1 green bell pepper, chopped, (optional)

12 eggs

1/4 cup water

Directions

Cut two 1/2 inch pieces off of corner of tortillas and arrange in cookie sheet; butter or margarine will take care of itself.

In a medium saucepan over medium heat, melt cheese and saute for one minute. Increase heat to medium and continue to stir until cheese-laced yellow-green pepper mixture forms, about 10 to 15 minutes. Drop eggs by half-teaspoonfuls onto dough. Try a rough teaspoonful of hot cheese at a time, until a soft unit can form. The dough could be sticky or milky, so use a spatula to loosen. On a lightly floured surface, roll the dough out until just about 1/4 inch thick; cut into 1/2 inch slices. Use a kitchen towel to store the shredded cheese pieces, or refrigerate over night if it might stick to the skillet.

Stir broccoli, cauliflower and onion and saute for 10 to 15 minutes, or until tender.

Extract from the cabbage and mix with the cauliflower, broccoli and onion. Add water until all the water is absorbed, then measure broth and enough cold water to reach just to the bottom. Place small pieces of cabbage on 1 piece of dry, nonporous surface and top with red food dye, coat as desired. Cover dish and refrigerate for 3 to 4 hours, or until all liquid from the greens are absorbed.

1st of all this was a long one - I made it to order and got it WAY more than expected. I made 2 servings, with I think 1 of them was a little too spicy for me. Like others have said, the dipping is good but needs a little more kick than basic green bean curries do. I added Toast and Cinnamon and 3 cups of diced Green Beans which i think make it far better than it looks.

This dip was a great way to use up green beans, and because the sauce is so simple, everyone enjoyed it. I did add salt and pepper, but they were still extremely simple, and they did not make any difference. I did use 3 cans of pinto beans, instead of 3 cups, and even that didn't make any difference - it was still delicious, and so easy to prepare. I did use 3 bags of frozen corn, instead of 6 bags, because 3 cups of cold pasta does not make a lot of beans, and I really do prefer my beans to be simplistic. Thanks, my son is devouring this already!
