1 cup margarine
2 teaspoons vanilla extract
1 cup white sugar
1 egg, beaten
1/2 cup milk
1 teaspoon lemon juice
1 1/2 cups peaches - pitted and sliced
1/4 cup lemon juice
1/2 cup orange juice
1 (3 ounce) can mandarin oranges, drained, juice reserved
1 (8 ounce) can sliced peaches
1 (3 ounce) package instant vanilla pudding mix
1/2 cup chopped almonds
1 teaspoon vanilla extract
2 cups Sifted confectioners' sugar
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, cream margarine with the vanilla and sugar until smooth. Stir in egg and milk. Mix together with lemon juice and lemon juice then stir in peaches and orange juice. Beat in lemon juice mixture. Drop by teaspoonfuls onto ungreased cookie sheets.
Bake for 9 to 11 minutes in the preheated oven, or until the tops are lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
