2 tablespoons olive oil
1/4 cup brown sugar
1/3 cup white sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup butter, melted
1 cup white sugar
1 (9 inch) unbaked pie crust
In a large bowl, combine olive oil, medium sugar, white sugar and flour. Let stand, then stir in baking powder and salt. Sift all together, then knead together margater, butter, white sugar and flour.
Pour enough batter to cover crust to prevent overflow. Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of pie comes out clean.
To make the topping: To Whisk together 1 cup white sugar and 1/2 cup margarine, pour over pie by double pressure, then dollop over top, letting set before filling.
