1 (6 ounce) can refrigerated white rice
2 tablespoons olive oil
2 teaspoons brown sugar
2 teaspoons chopped fresh chives
1 (10 ounce) can diced tomatoes
1/2 cup diced cucumber
1/3 cup lemon juice
1/3 cup distilled white vinegar
salt and pepper to taste
In a medium bowl, mix rice, oil, sugar, chives, tomatoes, cucumber, lemon juice and vinegar. Mix in salt and pepper. Cover and refrigerate.
