4 cups fresh peaches
1 1/2 cups white sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet or cake pan.
In a large glass or metal bowl, beat peaches until completely crisp. Stir in sugar, brown sugar, eggs, vanilla extract, lemon zest and pecans. Spread the mixture evenly on cookie sheet.
Bake in preheated oven for 45 minutes, until lightly browned. Do not brown on the sides of the pan. Cool completely on the cookie sheet.
