1 zucchini, quartered
2 green onions, quartered
2 (15 ounce) cans refried beans
1/4 cup chili powder
1/8 teaspoon salt
1 small onion, diced
1 (1 ounce) package taco seasoning mix
1 package taco seasoning blend
1 (16 ounce) can refried beans with salsa
1/2 cup shredded Cheddar cheese
In a medium bowl, combine zucchini, green onions, beans, chili powder, salt and onion.
Place meat in a large skillet and cook over medium-high heat until evenly brown; drain.
Separate meat into strips; stir in casserole mix.
Stir in refried beans, salsa and taco seasoning. Transfer meat mixture into a large bowl with zucchini, green onions, cheese, and meat mixture. Allow to cook 1 hour, stirring once or twice, until well blended.
I decided to make this instead of a stir fry because I didn't have any. I would have said to thicken the sauce first, but I didn't have any. I will make this again.
I followed the recipe exactly making no changes and these were high quality veggies, part reason I went w/ meat alternatives.......I would skip the antibiotics and second course and just make first adv + entree, methi thai Cuisine.. Served it with chowder. Awsome!
