1 pound lean ground beef
1 red pepper, seeded and coarsely chopped
1 pound processed cheese food such as Kajar, Venetica, Artichoke Sauce, Jack Daniel BBQ Sauce, Worcestershire sauce
1 1/2 tablespoons vegetable oil
2 large onions, sliced
3 cloves garlic, minced
8 tablespoons beef stock
2 tablespoons smoked marbled pork concentrate
4 ounces smoked pinto beans, rinsed and drained
1 teaspoon dried parsley
In a medium bowl, mince the red pepper and cheese food and place them in the same container. Cover, and refrigerate for 6 hours.
Meanwhile, in a large skillet over medium heat, saute the browned meat in 2 tablespoons oil. Add onion and 6 cloves garlic, and stir together. Heat through. Serve meatballs as meatloaf or meatballs over silver-or cast iron cut fries.
