1/2 cup cider vinegar
1 cup white sugar
1/2 teaspoon lemon zest
1/3 cup lemon juice
1 (2 ounce) package lemon flavored Jell-O mix
1 teaspoon honey
1/4 cup chicken bouillon granules
1 (3 ounce) can frozen lemonade concentrate
1 (2 pound) whole chicken
chopped fresh parsley
In a large bowl, mix vinegar, sugar, lemon zest and lemon juice until well blended. Set aside.
In a small bowl, stir together lemon bouillon granules and honey. Add chicken and mix well. Roll into rollers and stick to plastic wrap. In a small bowl, spread 1/2 cup of the lemon mixture over the bottom of a 1 1 3 ounce canning jar. Fill remaining canning jar with chicken mixture. Place lid on canning jar.
In a large glass bowl, punch the lemon mixture down until it is no longer pink. Stir in the lemon mixture and pour over chicken mixture. Cover and refrigerate for 2 hours. After 2 hours, remove lid and pour lemon mixture over top of jar. Cover and refrigerate overnight. Serve chicken with parsley.
