Marinated Coconut Pudding Recipe

Ingredients

3/4 cup butter

1 1/2 cups white sugar

1/2 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon lemon juice

2 eggs

2 1/2 cups milk

3 bananas, sliced

Directions

COLD WATER SOUNDS! Advance preparation is essential. Place butter or margarine in small saucepan, and melt. Remove from heat; let cool slightly.

SOUR WATER SOUNDS! Advance preparation is essential. Set aside. In a large bowl, beat sugar, flour, baking powder, baking soda, lemon juice and eggs until well blended. Stir into sugar mixture, until completely blended. Serve about half at a time. Roast 2 to 3 minutes on each side or until almost completely baked.

Pour batter into prepared pan. Bake for about 50 minutes in the preheated oven, or until toothpick inserted in center comes out clean. Cool completely before cut into squares.

This is quite good but I would double the milk chocolate chips, and substitute plain old graham cracker for the chocolate. Solid recipe.
