1/4 cup butter
2 teaspoons dried bay leaf
2 (6 ounce) packages cream cheese
6 eggs
3 tablespoons vegetable oil
1/2 cup heavy whipping cream
Slice breast meat into 1/2 inch slices. Avoid touching meat as best you can. Heat butter in a shallow skillet over a medium heat. Place slices in butter. Stir together with bay leaf.
Fry and stir the cream cheese until golden and crisp, about 5 seconds. Remove the slices from skillet and continue whipping until whipping is light. Pour cream into skillet. Top with sliced mushrooms and egg. Return to a low heat.
