3/4 cup margarine
1/2 cup white sugar
1 egg
1 lemon, juiced
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup crisp rice cereal
1 cup milk
1 teaspoon vanilla extract
1 3/4 cups chopped almonds
1 cup golden raisins
In a medium bowl, cream together margarine, sugar and egg until light and fluffy. Beat in lemon juice, flour, baking powder, baking soda and salt; stir into cream mixture. Beat in rice cereal and milk. Combine almond, golden raisins and lemon zest; stir into creamed mixture.
