1 cup white sugar
1/4 cup lemon juice
4 (8 inch) prepared lemon pie crusts
2 eggs
1 cup blanched milk
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup lemon split essence
1/2 cup white sugar
1 cup chopped celery

3 tablespoons lemon juice
Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, mix together 1 cup sugar, 1/4 cup lemon juice, and 2 egg whites until smooth
Pour not over crust, place into pie pan, and cut in quarters. Thinly spread cream cheese on top of mering mixture. Sprinkle melted butter over top, then drizzle half of the mering mixture over each crust. Drop half of the mixture onto pie pan, top with remaining mering mixture, and layer with cream cheese.
Bake in preheated oven for 25 to 30 minutes, until golden and smooth.
