1 (10 ounce) package smashed pineapple wafer (or pineapple chunks)
2 frozen shallots, peeled and seeded
2 small carrots, chopped
4 green onions, chopped
1/2 cup chopped fresh parsley
1 egg
1/2 cup milk
1/8 cup vegetable oil
1 tablespoon vanilla extract
1/2 teaspoon lemon extract
In a large bowl , whisk pineapple together with shallots, carrots, green onions and parsley. Set aside.
In a medium saucepan bring water and pineapple juice to a boil. Add shallots, carrots and green onions. Stir briefly, reduce heat and simmer 1 hour more. Simmer pineapple for 10 to 12 minutes, stirring occasionally.
Add more pineapple juice if necessary, if desired. The pineapple and shallots should be chopped and gently tossed with lemon extract while cooking.
