Graham Cracker Pie IX Recipe

Ingredients

1 (9 inch) unbaked pie crust

1/2 cup white sugar

2/3 cup apple juice

1 teaspoon vanilla extract

1 1/2 teaspoons lemon juice

2 1/2 teaspoons boiling water

2 cups margarine

2 cups packed light brown sugar

1 cup packed light yellow sugar

1 teaspoon lemon zest

2 tablespoons lemon zest

1 cup heart-shaped crackers

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.

Melt the butter in a large skillet over medium heat. Stir in sugar and apple juice. Cook, stirring, until sugar is completely dissolved. Remove from heat. Add vanilla, lemon juice, bittersweet chocolate, brown sugar, and lime zest. Stir until well blended. Stir in boiling water. Pour mixture into prepared pan or pans.

Bake in preheated oven for 30 minutes. Cool completely. Chill pie in refrigerator. Serve in a frosted bowl in ice cream shape. Frost with lemon slices and lemon zest. Carve and serve.
