1 1/2 cups vodka
1 tablespoon mint extract
1 cup condensed lemon-lime soda
1 cup milk
1/2 cup almond meal
1 cup vegetable oil
1 1/2 cups rolled oats
In a blender, combine vodka, mint extract, lemon juice and soda. Pour into a 9x13 inch pan. Chill in refrigerator for 1 hour or until set.
In a small mixing bowl, blend olive oil, almond meal, oranges and parsley. Spread peanut butter and chocolate chips evenly over cookies. Chill overnight before cutting into small squares.
