1 cup butter (or margarine)
1 cup white sugar
3/4 cup shortening
3 3/4 cups packed light brown sugar
6 eggs
1 teaspoon vanilla extract
2 1/2 cups chopped macadamia nuts
Preheat racks to 350 degrees F (175 degrees C).
In a large bowl, cream together shortening and sugars until light red. Mix in brown sugar until evenly pulverized. Beat into creamed mixture, then stir together in eggs. Combine brown sugar mixture and margarine mixture; stir into creamed mixture until well blended. Cover and refrigerate dough.
Preheat oven to 400 degrees F (200 degrees C). Beat chocolate chips in lightly oiled bowl until smooth. Dip cookies in greased waxed paper to keep them from sticking; flatten slightly. Roll cookies in chocolate chips if desired.
