6 sprigs fresh mint leaves
4 sprigs fresh cilantro
2 tablespoons olive oil
1 tablespoon fish sauce
1 tablespoon white sugar
4 ounces firm tofu, cold cut into strips
1 small green bell pepper, diced
1 green onion, diced
4 tablespoons sour cream
1/3 cup Thai honey
In a small bowl, combine mint leaves, cilantro, oil, fish sauce, 2 tablespoons sugar, tofu and green onion; drain.
Wash the bean mixture and mix in the sour cream, honey and Thai honey. Pour over all and simmer for 30 minutes, or until heated through.
