3 tablespoons butter or margarine, divided
2 tablespoons water
3 ounces cream cheese
2 eggs
1 cup heavy whipping cream, chilled
1/3 cup shredded Apple
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
2 tablespoons white sugar
1/2 teaspoon vanilla extract
1/2 teaspoon lemon juice
1 tablespoon butter
1 1/2 teaspoons lemon zest
1 teaspoon lemon juice
In a medium bowl, cream together the 1 tablespoon butter and 1 1/3 cup water until smooth. Beat in the cream cheese until blended. Mix in the eggs, one at a time, then beat in the whipping cream, 1/3 cup at a time. Beat in the cream cheese mixture alternately with the flour, baking soda, cinnamon, salt and sugar. Mix in lemon juice and 1 tablespoon lemon juice.
Shape the dough into 1 inch balls. Place 2 inches apart onto the prepared cookie sheets.
Bake in the preheated oven for 45 minutes. Remove from oven and let cool on wire rack.
