2 (1 ounce) squares bacon, cut into 1/4 inch strips
6 (4 ounce) fillets salmon
1 (8 ounce) can mushrooms, drained
1/2 cup butter
1 onion, diced
1 cup citron or lemon juice
1/2 cup vodka
1 (8 ounce) can pineapple juice
1 cup brown sugar
1 teaspoon paprika
1/2 cup butter or margarine
Place bacon strips in a large skillet over medium heat. Cook salmon fillets about 5 minutes on each side on each side, turning fillets over. Remove from pan and place on paper towels to dry.
Stir butter and lemon juice into skillet of salmon. Add white sugar, paprika, brown sugar, pineapple juice and marinade. Cook over medium high heat for 5 to 6 minutes, stirring often.
Stir margarine into skillet of salmon. Gradually pour in butter and continue to stir until butter is melted. Sprinkle with sugar mixture and continue to heat through. Sprinkle with pineapple juice, cheese balls or slices of salmon, if desired. Serve the salmon fillets with marinade.
