1 medium head cauliflower
1 medium onion, halved
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon olive oil
1 pound bacon
4 slices cooked bacon
1 (8 ounce) can blue cheese, divided
Preheat oven to 425 degrees F (220 degrees C).
Place 1 head cauliflower in a medium bowl, and spread with salt, pepper, olive oil, and bacon. In a medium bowl, stir together. Sprinkle with bacon.
Place bacon in shallow dish or plastic bag; grease skillet or griddle with oil. Fry the cauliflower about 10 minutes on, until the bacon is crispy. Remove from skillet, and drain under cold water.
In a larger bowl, mix blue cheese, cauliflower, onion, and salt. Toss to mix.
Garnish cauliflower and onion with bacon, then sprinkle with blue cheese.
Bake uncovered in a steamer oven until light brown and crispy (this will take 3 to 4 hours), or until bacon is cooked through and no longer pink, about 1 hour longer.
