Sweet and Spicy Pork Recipe

Ingredients

1 pound pork loin

1 (8 ounce) can crushed pineapple, drained

1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage

1 onion, minced

1 (8 ounce) can stewed tomatoes

1 cup chopped green onions

1 cup sliced fresh mushrooms

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place pork in a large roasting pan. Pour pineapple over pork in roasting pan and place the lemon-lime soda over the pineapple. Pour in the beer and tomato juice. Sprinkle with green onions and mushrooms. Pour the mixture over the pork.

Cover roasting pan with aluminum foil and place in the oven set in the oven to 425 degrees F (220 degrees C). Cover and cook for 1 1 1/2 hours, or until internal pork thermometer registers 145-155 degrees F (80 to 90 degrees C).

Remove meat from oven and slice into 1/2 inch slices. Reserve remaining roasting pan space. Place sliced pork on the prepared foil.

Roast uncovered for 30 minutes, or until internal pork thermometer registers 145 degrees F (80 degrees C).
