2 ounces cream cheese
1 1/2 teaspoons achiote powder
1 tablespoon white sugar
1/2 teaspoon salt
1 teaspoon ground white pepper
4 tablespoons isinglass
1 teaspoon light corn syrup
1 teaspoon hot apple cider vinegar
1 teaspoon vanilla extract
1 dash orange zest
Melt cream cheese and sugar in large mixer bowl, beat until smooth. Stir in salt, pepper and corn syrup. Add to cream cheese mixture. Mix until incorporated. Stir in vinegar and apple vinegar. Gradually stir back into cream cheese mixture. Taste and adjust to your taste.
Cook whisk until whisk is stiff. Remove from heat. Stir in vanilla extract and orange zest.
