2 tablespoons margarine
2 eggs
3/4 cup margarine
6 tablespoons sour cream
4 tablespoons lemon zest
3 tablespoons butter, melted
1/4 teaspoon pumpkin pie spice
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, cream together margarine and eggs. Beat in margarine mixture, then beat in sour cream and lemon zest. Stir in melted butter or margarine until ingredients are well blended. Spoon into a greased 8x8 inch baking dish.
Bake at 425 degrees F (220 degrees C) for 1 hour, basting with top half of the recipe.
