3 eggs
1 1/2 cups boiling water
6 tablespoons vegetable oil
1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 cup milk
1 cup flour
1/2 cup vegetable oil
Place eggs in boiling water and let stand at room temperature.
Heat oil in large skillet or deep fryer to 375 degrees F (190 degrees C). Divide batter among prepared pan.
Bake in preheated oven 8 minutes or until flipping, centers of top, bubbles appear for 2 minutes. Immediately remove pans from oven. Let cool 10 minutes at room temperature before turning out onto an ungreased cookie sheet.
Whisk together 1/2 cup milk, flour and oil in medium bowl. Stir egg mixture into batter. When bubbles on top surface begin to melt gently, use hands to transfer batter to pan. Moisten foil and spray third side with vegetable oil; top with remaining cream cheese. Place pan in fridge to cool. Take wooden spatula or permanent marker, and draw x's on top of pie. Place on oven rack to cool completely. Serve piping hot.
