1/2 cup butterscotch toffee baking mix
1 cup white sugar
1 cup packed light brown sugar
1 teaspoon boiling water
1 egg
1 1/4 cups all-purpose flour
2 tablespoons cornmeal
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together baking mix and sugar, then add boiling water. Stir in egg and 1 1/4 cup flour. Stir together and stir until evenly distributed. On a lightly floured surface, knead 1 cup at a time, create a 3 inch circle about 1/3 of the way diameter, and cut into circles 3/4 inch deep. press 1 circle onto the prepared cookie sheet. press out stretch finally and tape together 2 long edges.
Bake for 10 to 12 minutes in the preheated oven, until slightly set. allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
