2 cups mixed candied mixed nuts
1 2/3 cup heavy cream
1/4 cup white chocolate bittersweet
2 tablespoons vanilla extract
4 cups white sugar
4 eggs
4 teaspoons tropical-flavored bittersweet chocolate
Melt mixed nuts in the bottom of a double boiler over simmering water. Whisk together heavy cream and cocoa. Gradually whisk in chocolate, stirring till smooth.
Pour chocolate mixture into hot, briefly simmering water. Boil mixture for 2 minutes. Increase heat and pour mixture over nut to remove dark chocolate crust. Bring almost entirely to boil. Continue to boil for 60 seconds. Remove from heat.
Cool until lukewarm. Refrigerate until completely set. Decorate tops of bars by covering with chocolate strips. Refrigerate immediately. Alternatively, wait until slightly set in center, allow to set 2 to 4 minutes before cutting.
