4 sweet potatoes
1 (4 ounce) can crushed pineapple with juice
1 small carrot, diced
1 medium onion, diced
1 cup fresh lemon juice
1/2 cup distilled white vinegar
1 pinch salt
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Stir in the sweet potatoes, mix with boiling water, cover pot and cook 10 to 15 minutes, until tender. Mix with pineapple juice and lemon juice. Remove from heat.
Grate chicken parts, cut into 2 inch cubes (8 inches).
Place chicken cubes in a large microwave-safe bowl; microwave for about 20 minutes or until cooked through.
Place pineapple cubes in microwave-safe bowl. Stir in vinegar and salt.
Microwave pineapple cubes for about 30 minutes; microwave for an hour or so longer.
