1/2 cup margarine
2 eggs
1 tablespoon bottled lemon flavored clear white wine
1 teaspoon salt
1 teaspoon vanilla extract
6 cups packed brown sugar
3 tablespoons lemon juice
1 tablespoon olive oil
3 tablespoons canola oil
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets or line with parchment paper.
In a medium bowl, cream together margarine and eggs until light and fluffy. Beat in the lemon wine, salt, and vanilla. Gradually blend in brown sugar, lemon juice, olive oil, canola oil and vanilla extract. Mix well then knead into dough 1/2 inch thick. Roll dough into 1 inch balls and place on a cookie sheet.
Bake in preheated oven for 10 to 12 minutes, or until golden. Remove from baking sheet to cool on wire rack.
