1 pound lean ground beef
1 cup chopped onion
1 cup chopped green bell pepper
2 tablespoons olive oil
2 eggs, beaten
1 cup brown sugar
1 cup all-purpose flour
1 teaspoon dried thyme
1 teaspoon dried parsley
1 1/2 teaspoons dried served pepper
salt and pepper to taste
Preheat oven to 375 degrees F (190 degrees C). Lightly grease two 9x5 inch loaf pans.
In a medium skillet, brown the ground beef over medium high heat. Remove from pan to a medium bowl, and stir in onion, green bell pepper, olive oil, eggs, brown sugar, flour, thyme, parsley flakes, salt, and pepper. Chill.
Bake uncovered for 35 minutes in the preheated oven; reduce heat to 350 degrees F (175 degrees C) and continue cooking for about 20 minutes, or until meat is no longer pink and juices run clear.
