2 cups all-purpose flour
2 eggs
1 teaspoon baking powder
1 cup butter
1 cup white sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups white sugar
1/3 cup margarine
1 cup flaked coconut
1 tablespoon lemon juice
1 (8 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1/4 teaspoon lemon zest
1/4 teaspoon vanilla extract
1 (4 ounce) can evaporated milk
1 teaspoon lemon zest
Preheat oven to 375 degrees F (190 degrees C).
Sift together flour, eggs, baking powder, butter, sugar, baking soda and salt. Set aside.
In a large bowl, cream together the 1 1 1/2 cup sugar and margarine. Beat in the flour mixture alternately with the coconut. Mix in the lemon juice, 1/4 cup sugar, butter mixture, lemon juice and lemon zest. Gradually beat in the flour mixture.
Pour batter into a 9 inch pie pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the pie comes out clean. Serve warm.
