Serves 2
4 tablespoons olive oil
1/2 cup white wine
1 (10 ounce) can frozen cranberry cranberry beans, thawed
1 1/2 cups milk
2 tablespoons crushed pineapple juice
1 tablespoon pineapple juice
3 tablespoons lemon juice
salt and pepper to taste
1 tablespoon Dijon-style mustard
In a large bowl, mix olive oil, wine, cranberry beans, milk, pineapple juice, and pineapple juice. Season with lemon juice and salt and pepper. Mix until smooth. Serve warm.
